Okay, so I LOVE cookies, and if you are new to veganism you may not know where you can get some good cookies from! Well, I’ve got some great news for you… You can make them at home with a few simple ingredients!! This recipe only takes about 25 minutes to make! Which is great for even moms-on-the-go!

You will need the following ingredients:

  • 2 cups unbleached flour
  • 2 teaspoons baking powder
  •  1/2 teaspoon salt cinnamon, to taste
  • , optional handful vegan chocolate or carob chips
  • 1 cup raw sugar (turbinado; sucanat works too, but sucks up a lot of the moisture)
  • 1/2 cup vegetable oil
  •  1 teaspoon vanilla
  •  1/4 cup water

Since most everything is already room temperature you don’t have to worry about setting these things out. One thing that is different about this recipe than traditional cookies, is that you actually want to put the cookie sheet on top of the oven while it is re-heating so that they will pre-heat as well! You will want to preheat the oven to 350 degrees.

So beacuse I always ignore most recipes, I’ll tell you how I add all the ingredients and mix them. I take a large bowl and I…. Dumpa ll of them together and mix it! I know I know, they always say to seperate moist from dry but I just mix them all together all at once and they come out! But if you want to go ahead and seperate the liquid from the solid. Once those are each mixed with themselves you can add the liquids and the solids together and mix!

Once all of your ingredients are mixed together you can place the “dough” onto ungreased baking sheets. I usually use parchment paper to make cleanup easier. You will want to bake them for 5 minutes on one side and then 4 minutes on the other.

Like with most cookies, they are done when they are slightly softer than what you really want them to be. This is because they continue to cook even though they are pulled out of the oven and harden up. You will also want to set them on cooling racks so they don’t stick to anything like the pan or a plate.
