This is a great recipe for a quick side dish or even a full fledged meal. This recipe takes about 10-15 minutes to complete.  In a large sauce pan combine the corn, butter and a few pinches of salt and cook over medium heat until corn is just slightly cooked.  At that point add the thyme and then put into a serving bowl. Once it is in the serving bowl add coconut flakes almonds, red onion and citrus juice and stir.

3 tablespoons unsalted butter
5 ears of corn, shucked
fine grain sea salt
3 tablespoons fresh thyme leaves
1 cup / 1 1/2 oz / 40 g big coconut flakes, well toasted
1 cup / 3 oz / 85 g sliced almonds, well toasted

3 tablespoons chopped red onions
big squeeze of fresh lemon or lime juice

 

Most kids love to eat corn, so what a better way to get them to eat more of a variety of food than with corn! Of course if your child or anyone in your family is allergic to any of these ingredients you could sub out. If you wanted to sub out the almonds you could add plain sesame seeds to it instead, or sunflower seeds. Instead of coconut you could leave it out or put a harder cheese like mozzarella flakes on it.
